Curing salt is ordinary salt with a small, carefully measured quantity of nitrite, and often nitrate, mixed into it. In bacon it does two jobs at once: the salt draws moisture out of the pork and preserves it, while the nitrite protects the meat through the days it spends curing and gives bacon the colour, the firm texture and the unmistakable cured flavour that plain salt alone never produces. This article explains what is actually in a bacon cure, what each part is doing, and why the quantities on the packet are not a suggestion.
What is in a bacon cure?
The cure in our Bacon Making Kit is a traditional dry mix: salt and sugar, with sodium nitrite (E250) and sodium nitrate (E251). That is the whole recipe, and it is essentially the same mix British bacon has been made with for generations.
Alongside the cure, the kit carries three seasonings so you choose the character of your bacon rather than accepting whatever a factory decided: chilli and garlic, juniper and fennel, or pancetta. The cure does the preserving. The seasoning does the personality.
In an ideal world we would leave the nitrites out, and we say so plainly. But this is the easiest and safest way to cure bacon at home, and the nitrites are precisely what protect the meat while it cures. It is worth noting that our jerky and biltong kits use no cure at all, just seasoning blends, because dried beef is preserved by drying rather than by curing. Different process, different chemistry, different requirements.
What does the salt actually do?
Salt is the oldest preservative there is, and it works by moving water. Rubbed onto pork belly, it draws moisture out of the meat through osmosis, and the water it removes is water that spoilage bacteria need in order to grow. Less available water means a less hospitable environment for anything unwanted, and a firmer, denser piece of meat at the end of it.
That moisture loss is also the reason home-cured bacon behaves so differently in the pan. Most supermarket bacon is wet-cured, which means brine is injected into the meat, and much of that water comes straight back out the moment it hits heat. Yours is dry-cured and then air-dried, so it is firmer and more flavourful, and it crisps rather than sits in a puddle of its own white liquid, shrinking to half its size.
The sugar in the mix is there partly for flavour, balancing the salt, and partly because it softens the harsh edge that a pure salt cure can leave.
What do the nitrites do, and are they safe?
Nitrite is the ingredient that separates cured bacon from salted pork. It does three things. It protects the meat during curing, and in particular it is the standard safeguard against the bacteria responsible for botulism, which is the reason curing salts exist at all. It reacts with the pigment in the muscle to give cured meat its characteristic pink colour rather than the grey of cooked fresh pork. And it contributes a great deal of what we recognise as the taste of bacon.
On safety, the sensible position is the boring one. Nitrites are used in very small, controlled quantities, and the amount in a cure is calculated for the weight of meat it is designed to treat. That is exactly why the two rules below are not negotiable:
- Do not reduce the cure. It is not seasoning you can dial down to taste. The cure is what preserves the meat, and using less than the booklet specifies undermines the job it is there to do.
- Do not exceed the curing time. Longer is not safer, it is just saltier, and it is the single most common cause of bacon that comes out too salty to enjoy.
Follow the quantities and timings in the booklet, use fresh pork, keep it refrigerated throughout, and cook it through before eating, and home-cured bacon is a safe and very old-fashioned thing to make. If you have specific dietary or medical concerns about nitrites, that is a conversation for a doctor rather than a blog, and we would say so.
How does the cure work in practice?
The process is simpler than the chemistry suggests.
- Rub it in. Work the cure evenly over the whole surface of the pork belly. Even coverage is what gives an even result, and patches of bare meat are how you end up with a joint that is firm at one end and soft at the other.
- Refrigerate. Leave it for the time given in the booklet, during which the cure draws out moisture and does its work.
- Rinse and dry. Rinse off the excess cure and pat the bacon dry. This step also controls how salty the finished bacon tastes, so do not skip it.
- Air-dry. The bacon hangs in the fridge to dry, which develops the texture. Our own trick is to hang it from the top shelf so it dangles down into the door area where the tall bottles normally live, which is usually the one spot in a British fridge with room to spare.
- Slice and cook. A sharp kitchen knife is all you need, and by this point the joint is far firmer than raw belly and slices cleanly. Fry as normal, and always cook it through.
The whole thing runs on a cold cure, so there is no smoker and no special equipment involved, just your fridge and about a week.
What if it comes out too salty or too wet?
Two common outcomes, both fixable.
Too salty. Rinse it more thoroughly after curing, and soak it in cold water for an hour to draw out the excess before drying. Next time, stick to the curing time in the booklet rather than leaving it an extra day for luck.
Wet or not firm. It needs longer to cure and air-dry. Give it more time in the fridge so more moisture is drawn out, and check the cure was rubbed in evenly.
Two small bonuses while you are there. The trimmed pork skin makes excellent scratchings: cut it into bite-size pieces, toss with salt and a splash of vinegar and roast on a wire rack in a hot oven until puffed and crisp. And if you would rather have back bacon than streaky, the same cure works on a 500g pork loin joint with the skin removed, though we use belly in the kit because the thinner joint cures faster and more reliably at home.
Curing salt FAQs
Is curing salt the same as table salt?
No. Curing salt is salt with nitrite, and often nitrate, added in small measured amounts. It is intended for curing meat to a recipe, not for seasoning at the table.
Why does bacon need nitrites?
They protect the meat during the days it spends curing, guard against the bacteria responsible for botulism, and give bacon its pink colour and cured flavour.
Can I make bacon without curing salt?
Our kit's recipe is built around the cure supplied, and reducing or omitting it removes the protection the process depends on, so we would not recommend it.
Do all Sandy Leaf Farm meat kits use nitrites?
No. The jerky and biltong recipes use no cure at all, only seasoning blends, because those meats are preserved by drying.
Why is my home-cured bacon less watery than shop bacon?
Because it is dry-cured and air-dried rather than wet-cured and pumped with water, so it crisps in the pan instead of leaking and shrinking.
