The Scoville scale is the measuring stick the whole world uses to rank how hot a chilli is, from a sweet pepper that registers nothing at all to a superhot that can floor you in a single bite. What is the Scoville scale, and who invented it?

The Scoville scale is a chilli heat scale that ranks peppers by how much capsaicin they contain. Capsaicin is the natural compound responsible for the burn, and as a rule the more of it a chilli carries, the higher it climbs the scale. A crunchy sweet pepper has none, so it sits at the very bottom. A superhot is loaded with the stuff, so it sits near the top. Everything you might cook with falls somewhere in between.

The scale is named after Wilbur Scoville, an American pharmacist who devised his test in 1912 while working for a pharmaceutical company. His method, later called the Scoville Organoleptic Test, was ingenious in its simplicity. He took a measured extract of a chilli, dissolved it in sugar water, and asked a small panel of tasters to sip steadily more diluted samples until not one of them could detect any heat. The amount of dilution needed to reach that point became the pepper's rating. A chilli that needed diluting a thousand times before the burn vanished scored around one thousand Scoville Heat Units, and so on up the ladder.

How is chilli heat measured today?

Scoville's original taste test was clever, but it was also rough around the edges. Human taste buds tire quickly, tasters rarely agree, and everyone's tolerance is a little different, so the same chilli could earn quite different scores from one panel to the next. It gave a useful ballpark rather than a precise reading.

Modern laboratories have swapped the panel of brave volunteers for a machine. The usual method is high-performance liquid chromatography, or HPLC, which measures the concentration of capsaicin in a sample directly and then converts that figure into Scoville units. The result is far more consistent and repeatable, which is why the ratings you see quoted today rest on chemistry rather than on a wince. The scale still carries Scoville's name and speaks in Scoville units, but the guesswork has largely gone.

Here is roughly where the chillies most of us recognise sit on that scale. Treat every figure as an approximate range rather than a fixed value, because ripeness, growing conditions and even the individual plant all nudge the numbers up and down:

  • Sweet bell pepper: around 0 Scoville units. No capsaicin at all, which is why it is all flavour and no fire.
  • Padron and pimento peppers: typically only a few hundred units, mild with the very occasional surprise in the bunch.
  • Jalapeno: usually somewhere in the low thousands, the friendly benchmark most people picture when they think a bit spicy.

Why does chilli heat feel the way it does, and can you tame it?

Capsaicin does something rather sneaky. Your brain cannot easily tell molecular trickery from a real burn, so it reacts as though your tongue is genuinely under threat: your face flushes, your eyes water, and your body releases a rush of endorphins to cope. That flood of feel-good chemistry is a big part of why so many of us chase the burn rather than avoid it.

It also explains why reaching for a glass of water when your mouth is aflame does almost nothing. Capsaicin is an oil, and water simply pushes the oil around your mouth rather than washing it away. Milk works far better, because a protein in it called casein grips the capsaicin and lifts it clear. The same principle applies to your skin. Most of the capsaicin gathers in the pale pith and around the seeds, so stripping those out gives you a milder result, while leaving them in keeps every bit of the fire.
