Turn a basketful of foraged or garden fruit into your own homemade country wine. Blackberries, elderflowers, plums, apples: if you can pick it, you can very likely make wine from it.

This hedgerow wine kit supplies all the technical bits that make winemaking work: wine yeast, yeast nutrient, pectolase, finings, citric acid, a stabiliser and steriliser. You simply add your fruit, sugar and water.

The included recipes and clear instructions walk you through every step, from first ferment to a finished, drinkable wine you made entirely yourself.

How much wine does it make?
One gallon per batch, which is about 4.5 litres, or six standard bottles.
Which fruits can I use?
Dozens. Blackberries, elderberries and other hedgerow fruits are classics, and the recipe book covers many options.
What is the best season to make it?
Autumn is the classic time, when hedgerows are full of blackberries and elderberries. With frozen or shop-bought fruit you can make it any time of year.
Can I use supermarket or frozen fruit?
Yes. Frozen fruit works well and is often cheaper. Just defrost it fully and let it reach room temperature first.
What does hedgerow wine taste like?
It varies with the fruit: elderberry gives a rich red, blackberry a deep fruity note. Country wines have their own rustic character, quite unlike grape wine.
Is hedgerow wine hard to make?
No. It is beginner-friendly: add fruit and sugar, follow the book, and let time do the work.
Does the wine improve with age?
Yes. Like most country wines it mellows and improves given time in the bottle.
Can I make it without sugar?
No. The yeast needs real sugar to ferment into alcohol and cannot work on artificial sweeteners. You can back-sweeten the finished wine to taste.
