What's included in the beginner's cheese making kit?
Everything except the milk: rennet, citric acid, cheese salt, cheesecloth and step-by-step recipes. You just add fresh whole milk.
What cheese should a first-timer make?
Mozzarella. It is the quickest win, ready in about an hour, and it teaches the basics before you move on to ricotta, mascarpone and more.
How long does it take to make cheese with the kit?
Fresh cheeses are fast. Your first mozzarella can be ready in under an hour, with no ageing required.
How long does homemade cheese last?
These are fresh cheeses, best eaten within their first week and kept sealed in the fridge. They are not made for long ageing.
Is the kit suitable for vegetarians?
Yes. It uses vegetarian rennet, so every cheese you make with it is vegetarian.
What milk should I use?
Fresh whole pasteurised cow's milk. Standard supermarket whole milk works well. Avoid UHT or long-life milk, which will not set.
What if my cheese doesn't set?
It is almost always the milk or the temperature. UHT milk will not curdle, so use fresh whole milk, follow the booklet's temperatures, and it sets reliably.
What are common beginner mistakes?
The big two are using UHT milk, which will not set, and the wrong temperature. Fresh whole milk and a thermometer solve almost everything.
