Every Sandy Leaf Farm food kit carries a best before date printed on the outer box, and the shelf life from packing is 18 months. The cheese kits are the exception, at 24 months, and the Cheese Mould Kit has no date at all because there is nothing edible in it. We aim for every kit to leave us with at least 12 months still to run on that date, so a kit bought today has a long life ahead of it, whether it is opened this weekend or next summer.
Storage is simple: room temperature, somewhere dry, away from direct sunlight. A kitchen cupboard, a shelf in the spare room or the bottom of a wardrobe all do the job. No fridge, no freezer, no airing cupboard.
What does a best before date on a kit actually mean?
Best before is a quality date. It is the point up to which we are confident everything in the box performs the way it was designed to. It is not a cliff edge, and it is not a safety date.
After the date passes, quality slowly declines rather than the kit becoming unsafe. How that shows up depends on what is in the box, and the kits split neatly into two groups.
Flavour-led kits are the ones built on dried botanicals, spices, chillies and seasonings: gin, colour changing gin, spiced rum, chilli sauce, kebab, jerky and biltong. Their ingredients keep their character for a long time and then gradually fade. An older batch tastes less punchy, so you use a little more of it or steep it a little longer.
Kits with active ingredients are a different matter. The wine yeast in the hedgerow wine kit and the rennet in the cheese kits are doing biological work, and past the date they may stop working reliably. Wine that will not start and milk that will not set are the two failures that waste a whole evening and a whole batch of ingredients, so use those kits before the date rather than after it.
How long does each family of kits keep?
Gin, colour changing gin and spiced rum kits. Shelf life 18 months from packing, with the date on the outer box. The botanicals and spices are dried, so they are stable and flavour-led. You do not have to make every batch at once, which is the point of a kit that runs to several bottles.
Hedgerow wine kit. Shelf life 18 months from packing. The yeast is the ingredient that matters here, so treat the date as a genuine deadline. A batch takes 8 to 12 weeks from start to glass, so count backwards and start in good time.
Cheese kits. Shelf life 24 months from packing for the Cheese Making Kit for Beginners, Cheeses of the World and the Grand Cheese Making Kit. The rennet is the active ingredient, and tired rennet is one of the classic reasons a batch of milk refuses to set. The Cheese Mould Kit has no best before date, because reusable moulds and muslin do not go off.
Meat kits. Bacon, beef jerky, biltong, kebab and the Ultimate Meat Making Kit all run to 18 months from packing. Nothing in these boxes is fresh: the bacon cure is a dry mix of salt and sugar with sodium nitrite and sodium nitrate, and the jerky and biltong kits use no cure at all, just seasonings and, for biltong, cider vinegar. You supply the fresh meat on the day you make it.
Chilli sauce kit. Shelf life 18 months. Dried chillies fade in aroma and colour long before they fade in heat, so an older kit still makes a lively sauce.
Kimchi kit. Shelf life 18 months. The Korean red pepper, dried seaweed and sweet rice flour are all dry store ingredients; the cabbage and aromatics are yours to buy fresh.
Bubble tea kits. Shelf life 18 months. Loose leaf tea, tapioca starch and ready-made pearls are all pantry items, and the tea is the part that gently loses its edge with age.
Kintsugi kit. Not a food product, so there is no best before date to give. The epoxy keeps well while it is sealed, cool and out of sunlight, and the practice bowls and the gold-effect mica pigment do not age at all.
How long does what you make last?
The kit is one shelf life; the thing you make is another, and the second one is usually much shorter.
- Gin keeps for 12 months once made. Colour changing gin keeps for up to a year once strained and bottled, sealed and out of direct sunlight.
- Spiced rum is best drunk within a year of bottling, kept sealed and out of direct sunlight.
- Hedgerow wine should be drunk within a year of bottling, although country wines often improve with a few extra months first.
- Fresh cheese is fresh, not aged: eat it within the time given in the recipe, typically a few days to a week, sealed in the fridge.
- Bacon goes in the fridge and should be used within the timeframe in the booklet, or frozen, sliced first so you can take out a rasher at a time. Always cook it through.
- Jerky and biltong keep for a couple of weeks in an airtight container, and refrigerating extends that. If a batch still feels moist, eat it sooner.
- Kimchi keeps around two to three weeks in the fridge once fermentation is done, souring gently as it goes.
- Chilli sauce depends on the recipe: the vinegar and salt led ones keep longest, and every sauce belongs in the fridge once opened.
- Bubble tea is a same-day drink. Milk tea keeps in the fridge for up to a day, and cooked pearls for about four hours, covered in syrup.
Do the ingredients keep once the box is open?
Yes, and that is deliberate, because several kits are designed to be spread over months. Reseal opened sachets in the grip-seal bags provided, or in a small airtight tub, and keep them cool and dry. Cheese kit ingredients in particular last a long time once opened, so you can work through the recipes at your own pace; if you want extra certainty, decant them into sealed bags or boxes and label them with what they are.
